In the air, in the flour and on our hands are naturally occurring yeast and bacteria that can be nurtured to make a ‘starter’. This starter is what was used for millennia to make bread rise. We leave the dough to ferment for up to 36 hours because natural yeasts take longer to rise. While the dough ferments the bacteria start to break down the flour and gluten, making it easier to digest. As the tiny bacteria eat they produce acids which give our bread a tasty flavour. That’s why we call it Sourdough!

Coming from a ?? "pain au chocolat* specialist": BEST one of Aotearoa NZ! The baguette is also outstanding and staff is amazing. MUST DO of Taranaki! *I mean "chocolatine" ?

Probably the best pastries in New Zealand. The almond croissants are absolutely amazing, buttery, flakey, and delicious.

Lovely! Really cute place for good coffee and to pick up a sourdough loaf - you can watch them being made and fetched out of the oven. They also sell a small selection of sweet things and some stuff on toast. All in a really interesting new development made out of shipping containers squeezed between buildings. Look for the Quarter Bank sign in Devon St.

Great almond croissant, hidden gem behind the alley. The bread is also amazing, next time I will try the coffee and a cinnamon roll.

Wonderful little cafe tucked away off the main street. Totally worth a stop in for a great coffee (I had an americano) and pastry (I had croissant). Super cool outdoor seating area and friendly atmosphere inside.

When you have to order more , it means you are in love with the food at this place. Loved the PB&J crossiant as was so delicious, all the other items on menu looked delicious too. Must try for coffee lovers ..
